A wine yeast sour has been on my to do list for a long time now. I can tell from using killer yeast at bottling in my experience that they do not effect souring bacteria. Would LOVE to see you try get some of this plated and see what is not killed. <br /><br />I remember on the BN they had Shea Comfort on and he said 71B has a "berry" flavor when used in beer wort. Also it is not a killer strain. I always thought this might be a good strain to use with a mixed ferment of brett, lacto, pedio.<br /><br />Anyways thanks for all the great posts!William Rnoreply@blogger.com
