My hope in the dark malts, high alcohol, and sub zero temperature will help to minimize the damage done by oxidation, only time will tell. The only difference was that I used a salad spinner as a centrifugal extruder of sorts. Just chop up the granita and spin it a few times, taste the I and give it a go till you get the extraction you want.
