Generally when I make no-knead bread I refrigerate for at least a few hour which makes the dough a little easier to work with, so I wonder if that would help? The recipe is ~73% hydration, which is pretty sticky (especially in the summer when it is humid) surprised that even with another ~5 oz of flour down to 55% hydration that it wouldn't be pretty firm though? Rye flour can be tricky to work with though! I coated my hands in oil and flour, as well as added over a half cup of extra flour after the initial rise and it got stuck all over the counter and my hands. I ended up composting the dough as I couldn't get it to behave. Hahaha I have a big vat of wine that I actually need to get bottled, a little keg of beer fermenting, and some sourdough starter on my counter getting ready to make your no knead sourdough rye recipe. I have tried cheese with only 1 success out of like 5 tries...Made homemade feta and aged it for like 6 months and it turned out pretty good!
