At this point, we're just collecting bottles. Might still be a while yet though, since we have only maybe two dozen so far...Jason Lylehttps://www.blogger.com/profile/14799202793611930935noreply@blogger.comtag:blogger.com,1999:blog-8066877917844499643.post-47335247640462737102013-02-03T18:19:23.586-05:002013-02-03T18:19:23.586-05:00How is your re-entry into brewing going? How is your re-entry into brewing going? The Mad Fermentationist (Mike)https://www.blogger.com/profile/07379932734747507258noreply@blogger.comtag:blogger.com,1999:blog-8066877917844499643.post-65091194998604811972013-02-03T12:12:35.657-05:002013-02-03T12:12:35.657-05:00Mike, here's to those memories. Given it is their signature flavor, I'd be surprised if they had removed it and no one had made a big deal about it. Goût d'Orval and what not? The younger bottle was certainly mellower, but it still had the characteristic flavors of young Brett. Not sure exactly how old it was, could have been older than a year.

I know not too long ago they switched from adding the Brett in secondary with the dry hops, to waiting until bottling. Maybe that is what you are thinking of?The Mad Fermentationist (Mike)https://www.blogger.com/profile/07379932734747507258noreply@blogger.comtag:blogger.com,1999:blog-8066877917844499643.post-8206995382147486792013-01-29T11:13:32.184-05:002013-01-29T11:13:32.184-05:00I should have said 'apparently'. Since over a year, maybe even two.
There has been some microscopic images of different bottles/batches that show no signs of Brett, only of Sach.

Interesting in the Allagash, but that sadly will never reach Europe.

¥Anonymousnoreply@blogger.com
