Just talked to Dan at Beaver Brewing about his Kvass (flavored with lemons and open fermented), should be an interesting chapter.

When I trailed off I was writing “We would probably be better starting with an extra 5 gallons factored in to each fill to account for losses.”The Mad Fermentationist (Mike)https://www.blogger.com/profile/07379932734747507258noreply@blogger.comtag:blogger.com,1999:blog-8066877917844499643.post-80864928837388391632012-04-03T14:14:19.068-04:002012-04-03T14:14:19.068-04:00Will do, thankya.

I used to live in Regent Square and frequented the brewery. Good guy, creative, risk-taker. I'm sure you're aware of his expansion in progress. I’ve posted so many of these barrel fillings that I may have gotten lazy with the details. The issue is that on average everyone ended up slightly short of their 5/10 gallon targets. Sorry - I was basing my math off of your update dated 3/25. 10.5 gallon batch + 5 gallon with Brett Lambicus = 15.5 with ~3 gal headspace remaining. I probably missed something in there...

I'll keep my eyes open. 8 gallons would be okay, but if I could find something in the 15-30 gal range, that'd be ideal for me. The advantage of these regular barrels is that their prices are often lower than smaller barrels, this one was only $70, and I recently heard a distiller was selling 8 gallon barrels for $140. It certainly takes a group to fill, but that only adds to the fun.The Mad Fermentationist (Mike)https://www.blogger.com/profile/07379932734747507258noreply@blogger.comtag:blogger.com,1999:blog-8066877917844499643.post-67848769035402800932012-03-28T12:28:34.770-04:002012-03-28T12:28:34.770-04:00Love this blog - has been a great learning resourc...Love this blog - has been a great learning resource for me as I learn and expand my brewing knowledge.

Curious - what size barrel is this? If my math is right - around 20 gallons? I was in touch with a local (Finger Lakes Region) winery, but they only had 55 gal barrels, which is more than I can envision filling.pjdunnhttps://www.blogger.com/profile/10406264747561593950noreply@blogger.comtag:blogger.com,1999:blog-8066877917844499643.post-31244605975846252812012-03-27T23:23:08.298-04:002012-03-27T23:23:08.298-04:00I think racking onto pumpkin gives a bigger flavor...I think racking onto pumpkin gives a bigger flavor, although it takes a lot if you really want a squash flavor.
