Most of the bourbon barrel aged beers I have seen recently are darker beers which a probably more forgiving but are still overloaded with bourbon-iness IMO. I have a tripel recipe that turned out well and I am in the process of repeating it with bourbon oak cube aging. Leaving a beer to sour in primary works, but lends a more rustic/Bretty character that I associate with lambics.
