I just skipped the rye for 20% of wheat. Perfect summer beer. I used Mosaic and Hallertau Blanc in a 1:1 ratio, though. We selected it because on paper it has the three big compounds (linalool, geraniol, and 4-MMP) that are valuable for biotransformation. With the assertive dry hopping it is setting up that base saturated hoppy flavor. The best hop character we've had pre-dry hopping so far is Cascade and Columbus in Rings of Light. <br /><br />This one was a bit messier than most. I find that agitating the fermentor helps the hops to saturate and sink. I also over-brew on volume so I can leave beer behind with the hops and still get a mostly-full keg.
